Hey, Look at this! A Science Experiment in Sourdough
Note: the above loaf is not sourdough, just a nice looking small loaf I made awhile back.
So, everyone just gushes over sourdough bread. Ok, not everybody, but they should. There is nothing like a pizza dough made from sourdough. There is even some conjecture that sourdough, the original way to leaven, helps digest some of the gluten that everyone seems to be blaming for an ever lengthening list of maladies. I have tried to make a culture two times already and have failed. I will attempt for the third time to make a true wild sourdough from scratch. I will be posting about this several times over the coming weeks as the culture takes about 2 weeks before it is ready.
